- Economical: Save money by using vegetables you already have.
- Eco-Friendly: Reduce food waste and packaging.
INGREDIENTS:
- 900g fresh vegetables (a mix of carrots, yellow onions, celery, and leek)
- A handful of fresh parsley
- 20g dried mushrooms (optional, for a richer flavor)
- Laurel and rosmary
- Salt (half the weight of the dried vegetables)

1 Prepare the Vegetables: Wash and peel the vegetables if necessary. Chop them into small, even pieces to ensure quick and uniform drying.
2 Dehydrating: Spread the chopped vegetables in a single layer on the dehydrator trays. Set the temperature to 60°C (140°F) and dry for 8-12 hours, or until completely crisp.

4 Adding Aromatics: If using fresh parsley, add it to the dehydrator during 2-3 hours.
If using dried mushrooms, they don’t need further drying.
Combine the aromatics with the vegetables and blend everithing again.
5 Mix with Salt: Measure out salt equal to half the weight of the dried vegetables. Mix thoroughly with the vegetable granules.6 Store: Transfer the granulated broth to an airtight jar. Store in a cool, dry place for up to 1 year.
OVEN VERSION:
EQUIPMENT:
- Oven
- Baking sheets lined with parchment paper
- Blender or food processor
- Kitchen scale
INSTRUCTIONS:
1 Prepare the Vegetables: Wash and peel the vegetables if needed. Chop them into small, uniform pieces for even drying.
2 Set Up for Drying: Preheat the oven to 80°C (175°F). If your oven doesn’t go that low, use the lowest possible setting.
Spread the chopped vegetables in a single layer on baking sheets lined with parchment paper. Avoid overcrowding to ensure proper drying.3 Dry the Vegetables: Place the baking sheets in the oven. Leave the oven door slightly ajar (use a wooden spoon to prop it open) to allow moisture to escape.
Stir the vegetables every 1-2 hours for even drying.
4 Check for Doneness: The vegetables are ready when they are completely dry and crisp, with no residual moisture. This usually takes 6-8 hours.
5 Blend into Granules or powder: Once the vegetables are completely dried, weigh them and blend them in a blender or food processor. Pulse until you achieve a coarse granule texture or powder.
6 Adding Aromatics: If using fresh parsley, add it to the dehydrator during 2-3 hours.
If using dried mushrooms, they don’t need further drying.
Combine the aromatics with the vegetables and blend everithing again.
7 Mix with Salt: Add salt equal to half the weight of the dried vegetables. Mix thoroughly to ensure even seasoning.
8 Store: Transfer the granulated broth to an airtight jar and store in a cool, dry place for up to 1 year.
