Sesame Brittle
Sometimes, the best treats are made with the simplest ingredients.
Sesame brittle, also known as "croccante ai semi di sesamo" in Italian, is a perfect example of this. It’s a crunchy, slightly sweet snack that captures the nutty flavor of sesame seeds.
With just two ingredients — sugar and sesame seeds — you can make this timeless confection at home. Not only is it quick and easy, but it’s also a wonderful treat to serve at gatherings, gift to friends, or simply enjoy with a cup of tea.
This easy treat can be made with either white sugar or brown sugar, each lending its own unique flavor and texture. White sugar creates a crisp, clear caramel flavor, while brown sugar adds a hint of molasses for a deeper, richer taste. Here’s how to make both versions and find your favorite!
INGREDIENTS:
- 100g Brown sugar or White sugar
- 100g Sesame seeds (for a bolder flavor, lightly toast the sesame seeds in a dry skillet over medium heat for 3-5 minutes until they’re golden and aromatic)
For both recipes, the ingredient ratios remain the same. Just choose your preferred sugar to try.
INSTRUCTIONS FOR BOTH VERSIONS:
1 Prepare your ingredients: Have your sesame seeds and sugar measured and ready, as you’ll need to act quickly once the sugar caramelizes.
2 In a medium saucepan, add your chosen sugar and heat over low to medium heat.
- For Brown Sugar: It may melt slightly differently, giving a deeper caramel color and a softer texture due to the molasses.
- For White Sugar: Add a teaspoon of lemon juice to slightly reduce the sweetness. Stir constantly as it melts and transforms into a clear, golden caramel.
3 Quickly add the toasted sesame seeds to the melted sugar, stirring to coat the seeds evenly.
4 Pour the sesame mixture onto a baking mat or a piece of parchment paper and cover it with another piece, then use a rolling pin to flatten it ro your preferred thickness.
5 Allow the brittle to cool slightly, just enough to handle but still warm. Using a sharp knife, cut the brittle into squares or rectangles.
6 Let the brittle cool for 10-15 minutes.
The Flavor Showdown: White Sugar vs. Brown Sugar
- White Sugar Brittle: Delivers a classic, crisp crunch with a clear caramel flavor.
- Brown Sugar Brittle: Offers a deeper, more robust sweetness and a slightly softer texture.
Tips & Storage
- Experiment: Add a pinch of sea salt or cinnamon for extra flavor.
- Store: Keep the brittle in an airtight container for up to a week to maintain its crunch.
This sesame brittle recipe with its two versions gives you a fun way to experiment with flavor and texture. Try both and discover your favorite — or enjoy the unique tastes of each!
