INGREDIENTS:
- 1 can of chickpeas (240g), drained and rinsed
- 1 tbsp capers
- 4–5 sun-dried tomatoes
- 50g cooked beetroot (optional)
- 1 tbsp soy sauce
- 40g cornstarch (about 3 tbsp)
- 1 tbsp extra virgin olive oil
- 1 tsp dried rosemary
- Salt and pepper, to taste
- 3 bay leaves
INSTRUCTIONS:
1.Blend the Ingredients: Place the chickpeas, capers, sun-dried tomatoes, beetroot, soy sauce, cornstarch, rosemary, salt, and pepper into a food processor. Blend until the mixture becomes smooth and uniform.
2.Incorporate the Olive Oil: Add the olive oil to the mixture and blend again to ensure it’s fully combined.
3.Prepare the Water Bath: Fill a large pot with water, add the bay leaves, and bring it to a boil.
4.Shape the Deli Slice: Transfer the chickpea mixture onto a clean kitchen towel. Shape it into a cylinder, then roll it tightly in the towel. Tie the ends securely with string and add an extra tie in the middle for support.
5.Cook the Deli Slice: Carefully place the wrapped chickpea roll into the boiling water. Reduce the heat to a gentle boil and cook for 20 minutes.
6.Cool and Rest: Remove the chickpea roll from the water and let it cool completely. Once cooled, refrigerate it overnight to firm up and develop its flavors.
Serving Suggestions
