Taralli Pugliesi

Taralli are a quintessential Italian snack, especially beloved in the Puglia region.

These crunchy, ring-shaped treats are perfect as an appetizer, or a snack. Made with simple, wholesome ingredients, they embody the rustic charm of Southern Italy.

In this recipe, you’ll learn how to make authentic taralli using flour, olive oil, white wine, and salt. Let’s dive in!

INGREDIENTS:

  • 550g all-purpose flour ("00" flour is ideal for an authentic touch)
  • 120g extra virgin olive oil
  • 200g dry white wine
  • 12g salt
  • Optional: 3 teaspoons tomato paste and 1 teaspoon dried oregano for flavored variation
INSTRUCTIONS:

1.Step 1: Prepare the Dough

  • In a large mixing bowl, combine the flour, salt and olive oil mixing with a spoon or your hands.
  • Add the white wine and continue until the dough starts to come together.
  • Transfer the dough onto a clean surface and knead for about 10 minutes, or until it becomes smooth and elastic.
  • Divide the dough into two equal portions if making a flavored variation: for the flavored version, knead 3 teaspoons of tomato paste and 1 teaspoon of dried oregano into one portion until well incorporated.

2.Step 2: Shape the Taralli
  • Divide the dough into small portions.
  • Weigh each portion to ensure they are approximately 12g for uniformity.
  • Roll each portion into a thin rope, approximately 1cm in diameter and shape them into rings, pressing the ends together to seal.
3.Step 3: Boil the Taralli

  • Bring a large pot of water to a boil. Reduce to a simmer.
  • Drop a few taralli into the simmering water at a time. When they float to the surface, remove them with a slotted spoon and place them on a clean kitchen towel to dry slightly.

4.Step 4: Bake the Taralli
  • Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
  • Arrange the boiled taralli on the baking sheet, ensuring they don’t touch.
  • Bake for 40 minutes, or until they turn golden brown and crisp.
  • Allow them to cool completely before serving.

Serving Suggestions:
Taralli are incredibly versatile. You can enjoy them plain or experiment with additional flavors like fennel seeds, black pepper, or chili flakes mixed into the dough. For a vegan antipasto platter, pair taralli with marinated olives, sun-dried tomatoes, roasted artichokes, and hummus. They’re also delightful served alongside fresh vegetable sticks and a refreshing sparkling water with lemon.

Storage:
Store taralli in an airtight container at room temperature. They’ll stay fresh and crunchy for up to two weeks.

Whether you're enjoying them as a snack or a special addition to your gatherings, these taralli bring the authentic flavors of Puglia to your table. Their simplicity and versatility make them a perfect recipe to try at home. Buon appetito!
