Nian Gao: A Sweet and Sticky Tradition

Nian gao (年糕), or Chinese New Year Cake, is a classic dessert enjoyed during the Lunar New Year.

Its name symbolizes “higher year,” representing prosperity and growth. Made with glutinous rice flour and sugar, this chewy, sweet treat is as delightful to eat as it is meaningful.

INGREDIENTS:

  • 200g glutinous rice flour (mochiko or sweet rice flour)
  • 50g rice flour
  • 150g brown sugar
  • 200ml water
  • 1 tbsp vegetable oil (plus extra for greasing)

Optional for flavor:

  • 1 tsp vanilla extract
  • Sesame seeds or dried fruits for garnish
INSTRUCTIONS:

1.Prepare the Steamer:
  • Grease a round or square cake pan with vegetable oil to prevent sticking.
  • Set up your steamer, ensuring there’s enough water for 45 minutes of steaming.
2.Make the Sugar Syrup:
  • In a small saucepan, combine the brown sugar and water.
  • Heat gently, stirring until the sugar dissolves completely. Let it cool slightly.
3.Mix the Batter:
  • In a mixing bowl, combine the glutinous rice flour and rice flour.
  • Gradually add the sugar syrup while stirring to form a smooth, lump-free batter.
  • Add 1 tbsp vegetable oil and mix until incorporated.
  • If desired, stir in vanilla extract for added aroma.
4.Steam the Cake:
  • Pour the batter into the prepared pan, smoothing the surface with a spatula.
  • Place the pan in the steamer, cover, and steam over medium heat for 45 minutes.
  • Check doneness by inserting a toothpick—it should come out clean.
5.Cool, Slice, and Sauté:
  • Remove the pan from the steamer and let the nian gao cool completely before slicing.
  • Once cooled, slice the cake into pieces.
  • Heat a non-stick pan with a small amount of oil, then pan-fry the slices until golden on both sides for a crispy, caramelized finish.
Ways to Enjoy Nian Gao
  • Freshly Steamed: Enjoy it soft and sticky straight from the steamer.
  • Pan-Fried: Slice, sauté in a little oil, and savor the crispy edges paired with a chewy center.
  • Layered Dessert: Use it as a base for sweet toppings like red bean paste or coconut cream.
Storage Tips
  • Store nian gao in an airtight container in the fridge for up to a week.
  • Freeze slices for longer storage—just thaw and re-steam or fry when ready to eat.
This sweet and chewy dessert is not just a treat but a way to welcome abundance and success into the new year. Whether you serve it plain, pan-fried, or creatively topped, nian gao is a must-have for Lunar New Year celebrations.

Happy Chinese New Year! May this year bring you prosperity, happiness, and good health! 🧧
