INGREDIENTS:
  • 250g red lentils
  • 100ml warm water
  • 7g dry yeast
  • A pinch of sugar (to activate the yeast)
  • 30g extra virgin olive oil
  • 1 tsp salt
INSTRUCTIONS:

1.Soak the Lentils: Rinse the red lentils and soak them in plenty of water for at least 6 hours or overnight. Drain and rinse them well before using.
2.Activate the Yeast: In a small bowl, mix the warm water, dry yeast, and a pinch of sugar. Let it sit for 5–10 minutes until it becomes frothy, indicating that the yeast is activated.
3.Blend the Lentils: Add the drained lentils to a blender or food processor. Blend until smooth, adding the activated yeast mixture gradually to form a thick batter.
4.Add Oil and Salt: Pour in the olive oil and add salt. Blend again until the ingredients are fully combined, and the batter has a smooth consistency.
5.Let it Rise: Transfer the batter to a greased loaf pan. Cover it with a clean kitchen towel and let it rise in a warm place for 30 minutes-1 hour, or until it doubles in size.
6.Bake the Bread:
  • Preheat your oven to 180°C (350°F).
  • Bake the bread for 40–45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
7.Cool Before Slicing: Allow the bread to cool completely before slicing. This helps it firm up and ensures clean slices.

Serving Suggestions
  • Toast it: This bread is perfect toasted with a drizzle of olive oil or a spread of hummus.
  • Sandwiches: Use it as a base for hearty sandwiches filled with roasted vegetables or your favorite vegan fillings.
  • Dip it: Pair slices with warm soups or stews for a comforting meal.
Storage Tips
  • Room temperature: Store the bread in an airtight container for up to 3 days.
