Vegan Béchamel Sauce

Looking for a silky, dairy-free béchamel sauce? This recipe is a game-changer!

Perfect for lasagna, gratins, or creamy pasta dishes, this vegan béchamel delivers all the flavor and texture without the butter or milk. Plus, it’s super simple to make with just a handful of ingredients you probably already have in your kitchen.

If you’re gluten-free, I’ve got you covered! Check out my other post where I share a Gluten-Free (+fat-free) Version of this recipe.

INGREDIENTS:
  • 1 liter soy milk (unsweetened, plain)
  • 90 g all-purpose flour
  • 80 g olive oil
  • A pinch of nutmeg (to taste)
  • Salt (to taste)
INSTRUCTIONS:
1.Heat the Olive Oil: In a medium saucepan, heat the olive oil over medium heat.
2.Add the Flour: Add all the flour at once and whisk vigorously to form a smooth roux. Cook for 2–3 minutes, stirring continuously, until the flour loses its raw taste but does not brown.
3.Incorporate the Soy Milk: Slowly pour in the soy milk, whisking constantly to avoid lumps. Start with a small amount to thin the roux, then gradually add the rest.
4.Season and Simmer: Add salt and a pinch of nutmeg to taste. Bring the mixture to a gentle simmer, stirring frequently. Cook for 5–7 minutes until the béchamel thickens to your desired consistency.
5.Adjust and ServeTaste and adjust the seasoning if needed.

Tips for the Perfect Vegan Béchamel
  • No Soy Milk? Substitute with oat or almond milk, but choose unsweetened and unflavored varieties.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently, adding a splash of plant milk if it thickens too much.

How to Use Vegan Béchamel

This creamy sauce is incredibly versatile:

  • Lasagna: Layer it in your favorite vegan lasagna (check out my recipe on the blog!).
  • Casseroles: Pour over baked vegetables for a comforting side dish.
  • Pasta: Use it as the base for a rich, creamy pasta sauce.
Making vegan béchamel at home is so easy and rewarding. You’ll never need store-bought alternatives again! Whether you’re creating a cozy lasagna or a decadent gratin, this recipe is sure to become a staple in your kitchen.
